I love eggplants! Originally i come from south of Russia and there it's a very popular product. South-russian cuisine has also a pretty strong Caucasian influence. In my family we cooked a lot with Georgian spices. I was surprised that my European friends loved the dishes with Caucasian taste.
Here I share with you one of the hits, which is also totally vegan! (hey, Frank ;)
See the step-by-step recipe below...
For a small plate like on the picture we need:
- 1 eggplant
- 2 onions
- about 100-150 nuts. Originally it's walnut but i use almond as well
- some broth
- and IMPORTANT - georgian spices! Here is "Khmeli-Suneli" Wiki know even the recipe of it! Click here. And you can order in online even by amazon.
Lets start. It's really easy, no chance to f*ck it up... =)
Cut onion into really small pieces, fry it until transparent and a bit yellow, but not brown! Add the nuts.
They supposed to be finely ground. Stir everything.
Add the broth and stir. Let it cook for couple of minutes.
Add Khmeli-Suneli and stir. Ready. Put aside.
Now bring the ingridients together. You may roll it oder just put the filling inside the slice of an eggplant like on the picture.
