Yellow and Green Zucchini Curry

This is one of my favorite dishes! I love zucchini - grilled, cooked, baked, as a cream-soup etc... This dish is very light and easy to cook, great as a side dish or as a light main course.

This recipe comes from one of my favorite cook-book (and a lot others are yet to come!).  So I basically translate it for you into english.

For 4 Portions you need:

2 yellow zucchini
2 green zucchini
1 Tee spoon Coriander Seeds
2 Table spoons Ghee (or other oil)
2 Table spoons Ginger
1/2 tee spoon cumin
1/2 tee spoon curcuma
1/2 tee spoon garam masala
1 cup coconut milch
salt, pepper, chives

What to do:

Fry Coriander Seed on a dry pan, then mill them. Let Ghee get warm on the pan, add ginger and cumin, fry it for about 2-3 minutes. Add zucchini and cook for another 5 minutes. Add garam masala, curcuma, coriander seeds, salt and pepper, coconut milch and cook all together for 10 minutes - till zucchini are ready. Serve with chives or other greens.

Bon appetit! ;)

Green Borsch (Sorrel Soup)

Finally it's spring! And it's time for one of my favorite soups - Green Borsch! It's a traditional Russian and Ukrainian spring soup which is cooked without any beets but with a LOT of Sorrel (schavel in rus.)! Now you can find it everywhere, mostly on the farmer markets of cause. But in Metro Cash & Carry they have it as well. Well, let's start and let the spring taste great!

Green Beans

Summer time is a Grill time! And usually I don't think a lot about "what to cook for dinner" simply because in Germany we grill almost every day till it snows... So it's often about a salad or a side-dish.
We just love everything green! For example - green beans with garlic!
Simple and sooo good! Perfect as a side dish or even as a one-dish dinner.

Eggplants with Nuts Georgian Style - Step by Step

I love eggplants! Originally i come from south of Russia and there it's a very popular product. South-russian cuisine has also a pretty strong Caucasian influence. In my family we cooked a lot with Georgian spices. I was surprised that my European friends loved the dishes with Caucasian taste.
Here I share with you one of the hits, which is also totally vegan! (hey, Frank ;)
See the step-by-step recipe below...

Eggplants with carrots

It's a very russian dish. At least it is something from my south-russian childhood. So simple and so tasty! And smells great ;) You can serve it warm or cold, great with bar-b-q, as a salad, as a side dish - whatever... just try it!

Pumpkin with dried fruit and cashews

It's autumn - and it's time for warm and cozy food. Also it's a Pumpkin season, which I just love! I cook something with pumpkin every second day: doesn't matter whether it is a salad with baked pumpkin, or a creamy soup with coconut milk - it always makes me happy.
The recipe I'd like to share this time is also our autumn must-have - nothing special, but very flavored and cozy. And it's totally Vegan! I hope you love it as much as I do ;)
